Such is easy, there are 3-4 ways to do so. But if you were to prioritize your escape, any backtracking would result in all fort joy guards, attacking you on sight.

Once you've totally cleared fort joy, just go back to the base of that ladder, reconnect with the cat so he follows you, and lead him out to marshes over the bridge from the castle to marshes (near Zalleskar).

For the record, in general black cats aren't particularly harder to adopt than any other cats; though occasionally we'd have special adoption events at a local place called "black cat antiques."
